San Mon is a non-alcoholic sparkling wine embodying the essence of a timeless place: an ideal passage to lightness, relaxation, and authentic well-being. Crafted from our grapes, it preserves the must’s nutrients and benefits, with no additions or subtractions. Its refined presentation, inspired by Le Vigne di Alice’s clean, natural style, appeals to aesthetics and substance. The elegant transparent bottle with a minimalist label celebrates bubbles’ timeless charm, offering visual and gustatory delight even to non-drinkers. Perfect for toasting life without sacrificing symbolic gestures or aesthetic care.
**Soil**: Lean, prevalence of calcareous conglomerate rock (puddingstone) in the hilltop and crest areas; pockets of calcareous marl and sandstone in the middle slope areas; renewal of organic matter with cover crops and compost. 
**Altitude**: approximately 180 meters above sea level.  Pruning: Traditional
  **Harvest**: Exclusively by hand to avoid damaging the bunches.
  **Yield per hectare**: 4000 vines/ha, vine training system: double arched cane; annual replacement of vines that fail to germinate; yields approx. 13000kg/ha amounting to 9,450 l/ha.
**Harvest Date**: from September 15 to 30.

**PRODUCTION PROCESS**:

 - **Gentle harvest**: Selected clusters handpicked into perforated crates to preserve integrity and avoid premature fermentation. - **Careful processing**: Soft pressing, immediate must refrigeration, and micro-filtration to retain aromas and natural properties.  The must is maintained at a low temperature until bottling. - **Natural carbonation**: Pure CO2 for fine, persistent bubbles.
